1/4 | stick celery, finely sliced or chopped |

1/2 tblsp. | low-fat mayonnaise |
1/2 tblsp. | low-fat cream cheese, softened |
1 tsp. | corn relish |
1 tblsp. | cooked corn kernels (fresh or frozen), cooled |
How to make
This one is sure to satisfy the hungriest of family members! With the goodness of fibre, protein, dairy and veggies it will keep them going for hours.
1. Spread the mashed avocado onto two pieces of bread. Add the celery, shredded chicken and lettuce to one piece of bread with avocado then place the other piece on top, avocado side down.
2. In a small bowl, combine the mayonnaise and cream cheese frosting, stirring until well combined and smooth. Add the corn relish and stir until combined.
3. Spread the top of the sandwich with the corn mixture and sprinkle on the corn kernals.
4. Place the third piece of bread and cut into quarters or halves.

How to make
Holy Guacamole Sandwich

1/2 | lime, juiced |
1/2 | small red onion, as finely diced as you can |
1 | medium tomato, finely diced & excess juice drained |
1 | small handful of coriander leaves, roughly chopped |
2. Add the lime juice to taste.
3. Stir through the finely chopped onion, tomato and coriander leaves.
4. Transfer to an airtight container and refrigerate until needed as a spread between 2 slices of Wonder White bread.

What to use

1-2 | tblsp. home-made hommus (see recipe below) |
1/4 | Lebanese cucumber, grated |
1/4 | carrot, peeled and grated |

How to make
Starting out in our family as a dip to have with veggie sticks, hommus soon became my standby sandwich spread for those mornings when there is no time to be creative! With a little more time I add the veggies too, in grated form!
1. Spread the home-made hommus liberally on each slice of Wonder White bread.
2. Sprinkle the grated cucumber, carrot and celery on top of the hommus on one
piece of bread
3. Place the second piece of Wonder White bread with hommus on top and slice into
triangles.
Hommus & Veggie Sticks Sandwich
1 | x 400g tin chickpeas |
1 | small clove garlic, crushed |
1-2 | lemon juice |
1 tblsp. | olive oil |
2 tsp | dried mint |
1 tsp | cumin |
2. Combine the chickpeas, garlic, 1 tblsp. lemon juice, olive oil, mint and cumin in the bowl of a small food processor. Add 2 tblsp. of the reserved chickpea liquid and blend until smooth. Adjust with extra lemon juice if necessary to balance the flavours. Add another tablespoon of chickpea liquid if needed to form good spreading consistency.
3. Transfer to an airtight container and store in the refrigerator until needed as an easy sandwich spread.
